Gatti Mysorepak is a rich South Indian sweet made with a higher proportion of chickpea flour (besan) and ghee, giving it a dense, firm texture. To prepare, roast besan in ghee until aromatic, then mix in a sugar syrup boiled to a single-thread consistency. Cook until thick, then pour into a greased tray and cool. The result is a firm, buttery sweet, enjoyed during festivals and special occasions.
